Laksa Johor

Assalamualaikum Puan Kamaliah, in reply to your request for my ' Laksa Johor' recipe .
( before I start ,  please bewarned that saya bukan seorang chef , meaning I tak dapat nak bagi calculated amounts of the ingredients....hehe....all campak ikut instinct....

Bahan-bahanya untuk kuahnya:
  • Rempah  laksa . If you happen to be in Kluang, go to the market place and look for Makcik Salmah punya kiosk rempah .  Tak sure if she still masih ada , but her kids inherit the expertise of making authentic home-made rempahs . And she makes rempah laksa Johor too .  Tapi if you can't get hold of her, don't worry....improvise ya....use rempah kari ikan of your choice . I prefer Baba's . 
  • Bawang besar , bawang putih , ginger, lengkuas, serai ....I tumbuk . You can blend.
  • Santan ( I use fresh ) & water..
  • Asam keping , kerisik 
  • Ikan ,  take the meat after being boiled . Udang kering soaked till soft . Blend.
  • Garnishing : finely sliced cucumber , onion , coriander leaves , basil . Sambal belacan, limau kasturi halfed.
  • Jiahor seasoning + salt ( if you insist)

Hampir terlupa spagetti . Boil it in salted water . Once ready, spruce up with olive oil .


How to prepare :

In some hot virgin coconut oil ,saute the first two bahan-bahan till naik bau.  Then add water , and ikan and udang . Finally add santan, asam keping and kersik. Boil for a while sampai satu rumah berbau ...haha . Then serve garnshed .
